Executive Chef:
Heath Prosser

As a native of New Zealand, Heath has always enjoyed cooking. Growing up, he would hunt for eels, smoke them and sell them down at the local pub to save money for traveling.

At 18, Heath left New Zealand to travel the world and found himself in the Upper Peninsula of Michigan cooking at a pub. From there, he journeyed down to Miami, to work on Norwegian Cruise Line's SS Norway. With more than 45 nationalities on board, he was exposed to cooking techniques from around the world. While on the ship, he also met and married his wife, Linda. Shortly after, they moved to Australia where he gained his Certificate of Cookery in 1994 from Box Hill College.

Following this, he began working for several hotel restaurants, where he got an opportunity to open a new restaurant for Mirvac, a hotel management chain in his native country of New Zealand. While there, he and Linda started a family, and eventually made the decision to return to the United States with their two children, this time relocating to Hilton Head Island.

Heath began his career on Hilton Head Island at the Old Fort Pub, where he took the restaurant to a AAA Four Diamond restaurant. As an effort to have more time with his family, he then spent eleven years working for the Heritage Golf Group and is now proud to lead the culinary team at Red The Restaurant and Wine Boutique. He quotes “I have found my new home. Working with Tara and Arturo is a pleasure and we are currently renovating and developing a new menu to take this restaurant to new and soaring heights! Cooking is truly my passion and I am blessed to be able to make a living doing something that I love.”
